Cascara Coffee Cherry Tea is the dried fruit of the coffee cherry that surrounds the seeds known as coffee beans. It can be brewed using hot or cold water, just like other teas, producing a delicate and sweet fruity drink.

Cascara means “husk”, “peel” or “skin” in Spanish and is the dried skins of the coffee cherry.
The skins are collected after the seeds (aka coffee beans) have been removed from the cherries and are then dried in the sun.
The Cascara beverage is made by steeping the dried cherry skins in water, it can be enjoyed hot or cold.
Coffee farmers in Yemen and Ethiopia have been drying and brewing the cherry skins like this for centuries – possibly since before the coffee seeds were first used to make a drink.
The dried cherry was often steeped along with spices such as ginger, nutmeg or cinnamon to make a fragrant drink known as Hashara in Ethiopia and Qisher in Yemen.

Steep for 3 mins (or to taste)
RECOMMENDED METHOD
Place 10gms Cascara in a teapot or plunger.
Add 300mls filtered water at approx. 93deg
Allow to infuse for 3-4 minutes.
Drain the tea and discard the pulp.

Cascara has been found to contain high levels of flavanols, a type of antioxidant or polyphenols – a large class of bioactive compounds.
Some antioxidants are more effective than others, but this particular one – flavonoid – sits right at the top of the list. This is the ‘super-antioxidant’, and we in the coffee industry, have unlimited access. From a nutritionist’s point of view, there’s a lot to love about cascara.
In just one serving, cascara offers 375 milligrams of flavanols in a cup, or 25 milligrams per 100 millilitres. In comparison, a cup of green tea contains about 173 milligrams of flavanols, while a cup of filter coffee has a little more at 408 milligrams. What’s interesting to note from the initial study results is that unlike cocoa flavonoids, cascara has almost no fat, cholesterol, protein, sugar, sodium or carbohydrates, with few calories.
In one 150-millilitre cup, cascara is basically water with just a small 42 kilojoules or 10 calories with 2 grams of carbohydrates, and less than 1 gram of fibre, with little caffeine and lots of beneficial polyphenol antioxidants – called phytonutrients, which do wonderful things in the body to keep blood flowing freely, and helps with anti-ageing, inflammation, and metabolism.
The Italian laboratory report also found cascara’s caffeine levels to be significantly lower than coffee or tea, with 50 milligrams of caffeine in one 300 millilitre serving of cascara, but still enough to satisfy daily coffee cravings. A typical espresso has 78 milligrams per 40 millilitre serving.*
